Fish Tacos with Fajita-Grilled Vegetables and Cilantro-Lime Slaw
Last night, we were all set to grill some tilapia fillets on the patio, when the skies opened up with a torrential downpour. It was time for Plan B: Instead, I turned on my countertop grill and made delicious fish tacos and grilled vegetables in less time than it normally takes just to light the coals. While the smoky flavor you achieve from a charcoal grill obviously can't be replicated on an indoor grill, I still managed to get some nice grill lines, and the vegetables, cooked on the grill, became soft and caramelized... and I didn't lose any of them to the coals below, as I do on my Weber! I love fish tacos! I only eat fish and seafood, so fish tacos are a big hit with me on Mexican food nights with the family. We always make ours indoors on a George Foreman grill. It’s so quick! I prefer fast food to charcoaly food any day.
That looks so good, just might end up on my menu for this week.
I’m just getting introduced to the possibilities of grilling. I don’t eat fish and haven’t yet tried done tofu tacos on a grill, but my daughter is baking veggie Pizzas in her outdoor grill to keep from heating up the kitchen. The crust is superior to oven baked. Just fabulous.
