Bread Machine Recipe for Turkey Meatloaf

When I was testing out the Zojirushi Home Bakery Supreme bread machine, I was surprised to see in the instruction booklet a recipe for meatloaf. But, why not? If your machine has custom settings or a bake-only function, it can function as a tiny little oven. My family loves meat loaf, so I decided to give it a shot. I made mine with turkey, since it's better for you than fattier meats like beef, but since turkey meatloaf can often get dry and crumbly, I layered in some mozzarella cheese. Plus, I added spinach, partly because it's so good for you, partly because I thought the little flecks of green would be appealing. An hour in my bread machine and, sure enough, the meatloaf was perfectly cooked, and moister than if it were baked in an oven. It's a great solution if your oven is being used for something else, or if it's too hot out to heat up the kitchen. If you don't have a bread machine, or if yours can't be set to bake only, you could make this meatloaf in the oven and it would still be delicious. But what's the fun in that?
