During my last visit to my mom's in Santa Fe, I had the opportunity to take a sausage-making class at Las Cosas Kitchen Shoppe in Santa Fe. The last time I'd made sausage was in culinary school, and I remember being overwhelmed by the exacting temperatures and procedures in making emulsified sausages. But making Italian sausages or breakfast-type sausages turns out to be a breeze, as I quickly learned in the class. Particularly if you have a KitchenAid stand mixer and the food grinder and sausage attachments, you can make a big batch of sausages in an afternoon.
