On the weekends, when I have the luxury to be able to make dinner at a leisurely pace, I'll get out my pasta maker and roll out handmade pasta. Sure it takes longer than throwing a handful of dried noodles into a pot of boiling water, and it makes quite a mess in the kitchen. But there's something so satisfying about mixing up the dough, cranking it through my gleaming machine, and cooking the noodles up for a few moments. Tossed with homemade basil pesto or a hearty tomato sauce with sausage, it makes for a delicious meal that far outstrips the more convenient store-bought pasta.
While a motorized attachment to my KitchenAid stand mixer would certainly be easier, I use the Marcato Atlas 150 Pasta Maker, a beautiful, chrome-plated machine that as beautiful as it is functional. It was a gift from my friends when I graduated from culinary school years ago, and it continues to be one of my favorite kitchen tools ever, even if I don't use it as often as I'd like.
