I love meatloaf. It's comfort food at it's best, dense and satisfying and hearty. But since I try to avoid eating much beef, usually I prepare turkey meatloaf (like Individual Turkey Meatloaves with Maple-Roasted Brussels Sprouts). On a recent trip to Costco, however, I bought a large quantity (is there anything but, at Costco?) of organic beef, which makes for fantastic burgers. I decided to make a pound or so of it into meatloaf, and to ramp up the health quotient, bulk it up with some veggies. The result, Sneaky-Veggie Meatloaf, was a meal that the whole family enjoyed immensely. Even my eldest daughter, who hates mushrooms, didn't notice that minced creminis make up a large part of the loaf. The best part is, that with the addition of the minced veggies, the recipe ended up making two loaves, one to eat right away, and one to freeze... so guess what we're having again next week?
