Looking for the perfect drink for your next barbecue or garden party? Look no further than the lime rickey – a refreshingly tart combination of fresh lime juice, simple syrup and seltzer. It's easy to make and is a great "virgin" drink for teetotalers. Five citrus juicer options.

Prep Time: 10 minutes

Ingredients:

  • 8 ounces fresh lime juice (from about 6 to 7 limes)
  • 4 ounces simple syrup (see link to recipe, above)
  • 12 ounces seltzer water
  • Lime wedges, for garnish

Preparation:

  1. In a pitcher or a measuring cup with a spout, combine the lime juice and simple syrup.

  2. Fill four glasses with ice. Divide the lime juice-simple syrup mixture between the glasses (about 3 ounces each), and fill the rest of the glass with seltzer (about 3 ounces). Stir with a swizzle stick or a long spoon and garnish with a lime wedge, if desired.

This recipe for Lime Rickeys makes 4 servings, about 6 ounces each.
