Vanilla-Pumpkin Smoothie Recipe

Pumpkin Smoothie
Jessica Harlan

If you can’t get enough of pumpkin flavor in the autumn, this smoothie is for you! It’s sort of like pumpkin pie you can sip… but it’s way healthier. Peel and slice a few very ripe bananas, freeze them on a baking sheet for a few hours or overnight, and store the pieces in a zip-top freezer bag so that you always have frozen bananas on hand to make this and other smoothies. You can use canned pumpkin or fresh pumpkin puree.

Special Cooking Equipment Needed: Blender (one to try: the Ninja Professional blender), measuring cups and spoons, small spatula

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: 2 10-ounce smoothies

  • 1 sliced, frozen banana
  • 1 cup nonfat or low-fat vanilla yogurt
  • 1 cup pumpkin puree
  • 1/4 teaspoon cinnamon
  • 2 teaspoons maple syrup
  • dash ginger
  • dash nutmeg

  1. In the jar of a blender, combine the banana, yogurt, pumpkin puree, cinnamon, maple syrup, ginger and nutmeg. Blend on low speed until the ingredients are chopped. Scrape down the sides of the jar and increase the blender speed gradually to medium or high, blend until frothy, about 1 minute.

  2. Pour into two tall glasses, scraping the sides with the spatula to make sure all the smoothie is used.
