Mise en Place

Definition:

Translated from the French as "set in place," this refers to arranging all of the ingredients necessary for a dish before you start cooking. Ingredients should be measured and ready to add to the dish (which means, for instance, an onion should be diced or carrots should be peeled). Mise en place makes the actual process of cooking more efficient and helps prevent the cook from making mistakes or discovering missing ingredients at a crucial moment.
