Sprinkle the bread generously with the filling. In this photo, I'm using a combination of brown sugar, cinnamon and softened butter, and after I spread this filling, I then sprinkled a handful of raisins over the brown sugar mixture. If the raisins are particularly large, you might want to chop them finer in a food processor. Some bread bakers suggest that you first brush the dough with a beaten egg, which will help the dough stick to each other and prevent the swirl from gaping. Leave a little edge uncovered around the perimeter of your dough.
