Cooking Artichokes in a Pressure Cooker

Using a pressure cooker speeds the cooking time for artichokes

One of the drawbacks of cooking artichokes is how long it takes - large ones will take as long as an hour to steam. Using a pressure cooker will yield tender steamed artichokes in only 15 minutes. Here's how:

  1. Trim the base of the artichokes, and, if desired, use kitchen shears to trim the sharp points off the leaves (A 6-quart pressure cooker will hold 3 or 4 medium artichokes).
  2. Place a trivet or a steaming rack in a large pressure cooker, and fill the pot with water to just underneath the steamer. Bring to a boil. Add the artichokes, lock the lid onto place, and bring to high pressure over high heat. When pressure is reached, set the timer for 15 minutes (17 minutes for extra-large artichokes).
  3. At the end of the cooking time, use the quick-release method to release the pressure, and open the lid away from you to avoid getting burned by escaping steam. Serve as desired.
