These fish tacos have a summery flavor, but they can be enjoyed year-round on an indoor grill or grill pan. If you don't have taco seasoning, you can sprinkle the fillets with salt, pepper and cumin or a bit of cayenne pepper. I think mild tilapia makes the best fish tacos, but you can substitute any flaky white fish of your choosing. Be sure to check out my Indoor Grill Cooking Tips if you need any cooking tips.

Ingredients:
- For Cilantro-Lime Slaw:
- 3 cups shredded Nappa cabbage
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper
- For Fajita-Grilled Vegetables and Fish:
- Nonstick Cooking Spray
- 1 Vidalia Onion
- 2 Red or Green Bell Peppers, cut into 1-inch strips
- 2 Zucchini, cut on the bias into 1/2-inch thick slices
- 4 Tilapia Fillets (about 1 1/2 pounds total)
- 1 teaspoon Taco Seasoning
- 16 small corn tortillas
- Optional Toppings: Black Olives, Salsa, Sour Cream, Chopped Cilantro, Avocado Slices, Lime Wedges
Preparation:
- In a bowl, toss cabbage and cilantro together. Sprinkle with lime and toss to combine. Season to taste with salt and pepper. Cover and refrigerate until needed.
- Heat a countertop grill or a grill pan to medium-high. Spray with nonstick cooking spray. Add onion, peppers and zucchini to the grill and cook, turning occasionally, until softened and browned, about 10 minutes. Remove from grill and keep warm.
- Spray grill again with nonstick cooking spray. Sprinkle both sides of tilapia fillets with taco seasoning and place fillets on the grill so that the fillets are diagonal to the grill lines. Cook fish for about 5 minutes on each side, or until fish is opaque and have brown grill marks on them.
- Heat the tortillas briefly on the grill or in a nonstick pan over medium heat, about 10 seconds per side.
- To assemble tacos, stack two tortillas, then fill with a spoonful of pepper-onion mixture, a piece of fish and a spoonful of cilantro-lime slaw. Top with black olives, salsa, sour cream, cilantro, avocado slices or any other desired toppings.
