Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 2 eggs
- 1 1/2 cups milk
- 1/2 cup canned pumpkin
- 2 tablespoons melted butter
- 1 teaspoon vanilla
Preparation:
- Heat waffle maker. In a large bowl, combine flour, brown sugar, baking powder, salt and cinnamon. Stir to combine completely with a whisk.
- Separate eggs. Place egg whites in a medium mixing bowl or in the bowl of a stand mixer, set aside.
- In a medium mixing bowl, combine egg yolks, milk, canned pumpkin, melted butter and vanilla. Stir with a whisk until mixture is smooth. Pour pumpkin mixture into dry ingredients and stir with a spoon just until ingredients are combined. Mixture will be thick and lumpy; do not overmix.
- Beat egg whites with a stand mixer or an electric hand mixer until medium peaks form. Fold egg whites gently into batter.
- Spray the cooking surface of a hot waffle maker with cooking spray. Cook waffles according to manufacturer's directions. Serve immediately with butter and maple syrup or the toppings of your choice.
