Forget plain old white rice to serve with stir-fry and other Asian dishes. This easy rice cooker recipe makes rice that's subtly flavored with soy sauce and studded with edamame beans.

Prep Time: 5 minutes

Cook Time: 50 minutes

Ingredients:

  • 1 3/4 cups short-grained white rice, such as sushi rice
  • 3 1/2 cups water
  • 2 tablespoons soy sauce
  • 3/4 cup frozen shelled edamame beans
  • 2 tablespoons sliced scallions, optional
  • 1 tablespoon sesame seeds, optional

Preparation:

In rice cooker bowl, rinse rice several times, until water runs clear. Drain water from rice, then add fresh water, soy sauce and edamame beans. Stir to combine. Set rice cooker to regular cycle. When rice is finished cooking, keep warm or serve immediately. If desired, garnish each serving of rice with a sprinkling of sliced scallions and sesame seeds.

Serves 4 to 6 as a side dish.
