How to Make Ice Cream

With an automatic ice cream maker, you can enjoy homemade ice cream quickly and easily. This tutorial demonstrates how to make vanilla ice cream with a custard base (meaning it uses eggs). Once you master this technique, you can try other flavors (Check out my list of Interesting Ice Cream Flavors for ideas). I'm using a Cuisinart ICE-20 ice cream maker which, like many models, comes with a freezer bowl (other models to look for that have a similar design include the Hamilton Beach Ice Cream Maker (Model 68320) and the KitchenAid Ice Cream Maker Attachment (KICA0WH). Before you begin, make sure that your freezer bowl is completely frozen—it's a good idea to put it in the freezer a full 24 hours before you plan to make the ice cream. Also, allow enough time for the custard to chill before you plan to make the ice cream, which could take several hours.

First, assemble the ingredients:

  • 1/2 cup sugar
  • 2 eggs
  • a pinch of salt
  • 1 1/2 cups milk (whole or low-fat)
  • 1 cup cream (heavy or light)
  • 2 teaspoons vanilla extract
