Anolon's Nouvelle Copper cookware line uses a combination of aluminum, copper and stainless steel in its construction to offer cookware that aims to exhibit the best properties of these metals. The line is made by Meyer Corp. (Which also makes cookware under the Circulon, KitchenAid, Silverstone and Bonjour names). Anolon is a mid-priced cookware brand known for its fair prices and good quality.

About Anolon Nouvelle Copper Cookware

This cookware line is designed with layers of aluminum sandwiching a layer of copper, and an impact-bonded, magnetized stainless steel cap, which means that the cookware can be used on induction cooktops. The interior is coated with Dupont Autograph nonstick coating, and stainless steel handles are riveted to the pan. The cookware is hard-anodized, an electro-chemical process that hardens metal to make it more durable.

Nouvelle Copper to the Test

In my tests, I found Anolon Nouvelle Copper cookware to conduct and distribute heat as evenly as more expensive brands. When simmering foods like custard or rice, the pot helped to maintain a low simmer without burning the food onto the bottom of the pan, and for higher-heat cooking, it nicely browned proteins.

I also liked the design of the pan. A split handle design kept the metal handle cool to the touch, while the handle was just thick enough to ensure a comfortable, firm grip. Many pans have "helper" handles, which is especially nice when you're pulling the pan out of the oven. I also appreciated the design of the interior rivets that held the handles to the pan; they are flush and smooth against the pan, which keeps food from collecting in crevices. The nonstick coating was effective in keeping food from sticking, and made for easy clean-up, although after several uses I felt like the nonstick surface was getting a tacky film buildup on it. The lids have a domed shape, which give the cookware an elegant, shapely look, but also mean they're bulkier to store, especially if you use a pot lid rack. But, they fit snugly onto the pots and the lid's handle was high, making it easy to lift, even when using a potholder.

In general, I'm not a fan of collections that are completely nonstick, not offering an uncoated option. But I did come to appreciate the nonstick qualities in the pan I tested (the 3-quart saute pan), and the fact that it's nonstick but also oven-safe is a boon; using these pans to make roasts and casseroles in the oven will mean faster, easier clean-up.
