If you don’t like the additives in cooking sprays, or if you’re trying to keep healthy by limiting the amount of oil you eat, the Misto is just the ticket.

Made of brushed aluminum in a sleek cylinder shape that looks far nicer on a counter than a bottle of cooking spray, the misto is a refillable oil sprayer that works with a pumping action that pressurizes the contents and releases the in a fine mist.

According to the manufacturer’s instructions; the user should fill the oil reservoir (reachable by unscrewing the sprayer cap) about halfway. Place the pumper lid on the base and pump it about 10 times. At this point, the Misto is ready to use, just remove the lid and spray.

The Misto can be used to grease baking pans, dress a salad, spray food before it’s grilled or roasted, season pasta or oil a skillet or sauté pan, among other things. It can be used with any type of vegetable-based oil, including nut oils, grapeseed oil, canola or vegetable oil. It can also be used with vinegar, citrus juice or water.

In recent years, the Misto has expanded its assortment. Besides the original brushed aluminum model, you can now buy the Misto in upscale stainless steel, various metallic colors, or clear BPA-free bottles.

The Misto to the Test

I found the Misto to be a very handy and eco-friendly alternative to cans of cooking spray. I particularly like that it is reusable (less trash for the landfill), does not use chemical propellants, and the sprayed oil does not contain lecithin, an additive that can ultimately give your pans a sticky, gummy residue. What’s more, you can use better-quality and healthier oils than what is usually found in spray oils.

It’s important to pump the Misto quite a few times before using; otherwise, the oil comes out in a stream or a dribble instead of a fine mist. Depending on what you’re cooking, you might also need to pump it again during use, in my tests the spray action lasted less than 10 seconds before sputtering.

Although the oil in the Misto lasts quite a long time before needing to be refilled, I did find the refilling process a bit tedious. It’s difficult to see how much you should fill it, since it works best if it’s only filled halfway. An internal marking would be helpful.

I haven’t had to clean my Misto yet, but the manufacturer recommends cleaning it by filling with hot water and a drop of detergent, and spraying. I’d recommend then refilling with clean hot water and spraying again to remove any lingering detergent.

Ultimately, I found the Misto to be a very useful kitchen tool. I use it often for coating a chicken before roasting, spritzing popcorn for a healthier alternative to butter, lightly spraying vegetables (it's great for making Kale Chips!)and spraying baking pans. In fact, I’m planning on buying another one so that I can have two different kinds of oils at the ready.
