My mother makes this noodle kugel recipe for Rosh Hashanah and other Jewish holidays. Kugel is a traditional Jewish casserole. To me, it's classic comfort food at its best. Pair it with sautéed sausages and some steamed vegetables or a tossed salad.

- 1/4 pound butter, in pieces
- 3/4 cup sugar
- 1 cup sour cream
- 1 cup applesauce (not unsweetened)
- 1/2 teaspoon lemon juice
- 4 eggs, beaten with a whisk
- 3/4 cup raisins
- 2 teaspoons cinnamon
Preparation:
- Preheat oven to 350˚F. Coat the inside of a 9- by 13-inch glass or ceramic baking dish with butter, cooking spray or shortening. Cook noodles in a pot of boiling water according to package directions, drain well.
- Place hot noodles in a large mixing bowl and toss with the butter until butter melts. Add sugar, sour cream, applesauce and lemon juice, stir to combine completely with noodles. Add eggs and mix well. Sprinkle raisins and cinnamon over the mixture and fold gently to evenly distribute.
- Place noodle mixture in the prepared baking dish and bake at 350˚F for 45 to 60 minutes, until the top of the kugel is just starting to turn golden.
This noodle kugel recipe serves 8 to 10 people as a side dish.
