- 2 pounds potatoes, both sweet and white varieties, washed
- 2 tablespoons extra virgin olive oil
- Kosher Salt and Pepper
- Preheat oven to 400˚F. Cut potatoes lengthwise into narrow wedges, no more than 3/4 inch thick. Line a sheet pan with parchment paper and arrange potatoes in a single layer on the pan. Drizzle with olive oil and sprinkle with salt and pepper. Gently toss potatoes with your hands to coat completely with the olive oil.
- Bake potatoes at 400˚F until potatoes are tender on the inside and lightly browned and beginning to crisp on the outside, about 30 to 45 minutes, turning potatoes over once about halfway through cooking. Serve with ketchup and malt vinegar.
