Sweet and Savory Oven Fries

Combining sweet potatoes and white potatoes means that these oven fries will have an extra boost of nutrients in a recipe that's already far healthier than regular French fries. Lining the sheet pan with parchment paper will make cleanup a snap. You can also serve them Belgian-style, by nesting cones of parchment paper into pint glasses and filling each with a handful of potatoes. If you've made smoked sea salt, it makes a great seasoning in place of regular kosher salt.

  • 2 pounds potatoes, both sweet and white varieties, washed
  • 2 tablespoons extra virgin olive oil
  • Kosher Salt and Pepper


  1. Preheat oven to 400˚F. Cut potatoes lengthwise into narrow wedges, no more than 3/4 inch thick. Line a sheet pan with parchment paper and arrange potatoes in a single layer on the pan. Drizzle with olive oil and sprinkle with salt and pepper. Gently toss potatoes with your hands to coat completely with the olive oil.

  2. Bake potatoes at 400˚F until potatoes are tender on the inside and lightly browned and beginning to crisp on the outside, about 30 to 45 minutes, turning potatoes over once about halfway through cooking. Serve with ketchup and malt vinegar.

A perfect complement, Member vanster

We had a couple of friends of ours over for dinner the other night and I wanted to make a meal that wouldn't require me to stay in the kitchen all night. I decided to go with the pulled-chicken sandwich recipe and was looking for a side item to go with it. What's better than a nice sandwich with some good fries on the side? I decided to go with this recipe, and combined with the sandwiches and a small garden salad, it was the perfect Friday night meal. Plus, I got to socialize with our guests!
