Even those who think they don't like Brussels sprouts might be surprised at how much they like this dish of sauteed, shredded Brussels sprouts. It's fast and easy to prepare, and seems to have a milder flavor than when the sprouts are prepared whole. It makes for a quick, easy side dish that's great alongside chicken or pork.

Ingredients:
- 1 pound Brussels sprouts
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1/3 cup water
- 1/2 teaspoon dried thyme
- 1 teaspoon balsamic vinegar
- Salt and pepper
Preparation:
- To prepare Brussels sprouts, trim off the stem end, cut sprouts in half vertically, then slice each half horizontally to make shreds. (The slicing can be done on a mandoline). Set aside.

In a saucier pan or a large saute pan, melt butter over medium heat. Add garlic, stirring constantly, until browned, about 30 seconds. Add Brussels sprouts, stir to coat them with the butter and garlic. Cook for about 1 minute.
- Add water and a pinch each of salt and pepper to the pan and cover pan. Cook for 7 to 9 minutes, until Brussels sprouts are tender.
- Remove the cover and continue to cook until the water has evaporated nearly completely. Add thyme, vinegar and more salt and pepper to taste.
